Ingredients

  • 750 g apple (gala or fuji; about 4 units)
  • 100 g crystal sugar
  • 1 tsp cinnamon powder (to taste)
  • 0.5 g nutmeg (freshly grated, optional)
  • 10 mL vanilla essence (transparent or regular, optional)
  • 5 g cornstarch
  • 200 mL water (50%)
  • 40 g wheat flour (10%)
  • 65 g cold water (16.25%)
  • 75 g vegetable oil (18.75%)
  • 40 g crystal sugar (10%)
  • 6 g refined salt (1.5%)
  • 360 g wheat flour (90%)
  • 6 g instant dry yeast (biological leavening agent)
  • 10 g cane molasses (for glazing, optional)
  • 20 mL water (for glazing, optional)

Instructions 

  • Prepare the dough by mixing dry ingredients and gradually adding wet ingredients until a smooth dough forms.
  • Let the dough rise until doubled in size, about 1 hour.
  • Slice apples and prepare filling with sugar, cinnamon, and nutmeg.
  • Roll out dough, add apple filling, and shape as desired. Brush with glaze if using.
  • Bake at 180°C (356°F) for 20 minutes or until golden.

Notes

Use ripe apples for best flavor and adjust sugar to taste.
