Alfajor com Doce de Leite de Cabra (Cajeta)

Delightful Brazilian-style cookies filled with rich goat milk caramel, perfect for a sweet treat.

Ingredients

Dough

  • 45 g manteiga sem sal (temperatura ambiente, 25-30ºC)
  • 35 g açúcar refinado
  • 0.5 egg ovo (half, measured by weight)
  • 10 g mel
  • 100 g farinha de trigo
  • 1 g fermento químico em pó (menos que 1/4 teaspoon)
  • 1 g sal refinado (menos que 1/4 teaspoon)
  • 1 recipe Cajeta (doce de leite de cabra)
  • 50 g coco ralado (seco; opcional, decoração)

Instructions 

  • Measure half the egg by mixing and weighing, or estimate.
  • Mix butter, sugar, egg, and honey until smooth.
  • Add flour, baking powder, and salt; mix just to combine. Chill dough for 45-60 minutes.
  • Preheat oven to 180°C. Roll out dough to 0.3-0.5cm thick, cut 5cm circles, and chill if soft.
  • Place discs on baking sheet and bake for 8-10 minutes until lightly golden. Cool completely.
  • Spread cajeta on one cookie, top with another, and optionally coat sides with coconut.

Notes

Chill dough if it becomes too soft for easy handling.
