Instructions
Measure half the egg by mixing and weighing, or estimate.
Mix butter, sugar, egg, and honey until smooth.
Add flour, baking powder, and salt; mix just to combine. Chill dough for 45-60 minutes.
Preheat oven to 180°C. Roll out dough to 0.3-0.5cm thick, cut 5cm circles, and chill if soft.
Place discs on baking sheet and bake for 8-10 minutes until lightly golden. Cool completely.
Spread cajeta on one cookie, top with another, and optionally coat sides with coconut.
Notes
Chill dough if it becomes too soft for easy handling.
