Ingredients

Dough

  • 150 mL leite desnatado (warm (~40ºC))
  • 8 g açúcar cristal
  • 7.5 g fermento biológico seco instantâneo
  • 50 g farinha de trigo (#1)
  • 1 ovo ovo (~46g, temp. ambiente)
  • 115 g manteiga sem sal (temp. ambiente (25-30ºC))
  • 300 g farinha de trigo (#2)
  • 1.5 g sal refinado (cerca 1/4 c. chá)
  • 250 g goiabada cascão/firme em cubos (#1)
  • 50 mL água
  • 50 g goiabada cascão/firme em cubos (#2)
  • 70 mL água
  • 50 g açúcar cristal

Instructions 

  • Mix warm milk, sugar, and yeast; let activate for 10 minutes.
  • Add flour, egg, and softened butter; knead until smooth.
  • Incorporate salt and remaining flour; let dough rise for 1 hour.
  • Roll out dough, spread goiabada, and roll into a log.
  • Slice and place in baking dish; bake at 180°C (356°F) for 40 minutes.

Notes

Ensure goiabada is firm for easier spreading and rolling.
