Banoffee Pie: Torta de Banana

A delicious and indulgent dessert combining a buttery crust, caramelized bananas, whipped cream, and optional chocolate topping.

Ingredients

Dough

  • 0.5 recipe Massa de Torta
  • 100 g açúcar refinado
  • 100 mL leite integral
  • 2 bananas bananas nanicas (caramelo)
  • 3 bananas bananas nanicas (recheio)

Cream and Topping

  • 200 g creme de leite fresco/pasteurizado (42% gordura)
  • 50 g açúcar refinado (chantilly)
  • 10 g café solúvel (1 c. sopa)
  • 10-15 mL água
  • 20 g açúcar refinado
  • 10 mL extrato de baunilha (opcional)
  • 50 g chocolate meio amargo (opcional) (lascas)

Instructions 

  • Prepare the tart crust, bake at 180°C for 20-25 minutes until golden, then cool.
  • Blend two bananas with milk until smooth, set aside.
  • Make caramel with sugar, then add banana mixture, cook until smooth.
  • Pour caramel over cooled crust, let cool.
  • Slice remaining bananas diagonally, arrange over caramel.
  • Whip cream with sugar and vanilla until soft peaks form, set aside.
  • Mix coffee with water and sugar, then swirl into whipped cream for marbling.
  • Spread whipped cream over bananas, garnish with chocolate if desired, then chill before serving.

Notes

Chill the pie for at least 2 hours before serving for best flavor.
