Ingredients

Flours

  • 245 g all-purpose flour
  • 175 g pre-cooked corn flour

Dairy

  • 226 g unsalted butter (room temperature)
  • 150 g granulated sugar

Eggs and Citrus

  • 1 unit large egg
  • 1 unit large egg yolk
  • 3 g refined salt
  • 1 unit sicilian lemon (zest) (rasp of the peel)
  • 1 unit sicilian lemon (juice)

Instructions 

  • Preheat oven to 180°C (350°F). Prepare baking sheet with parchment paper.
  • Cream butter, sugar, and lemon zest until smooth and homogeneous.
  • Add egg, then yolk, lemon juice, and salt, mixing well.
  • Mix in flours just until incorporated; do not overmix.
  • Transfer dough to a piping bag with star tip and pipe S-shaped cookies or desired shape.
  • Bake for 13-15 minutes until edges are lightly golden.
  • Cool for 5 minutes on the baking sheet, then transfer to a wire rack to cool completely.
