Instructions
Preheat oven to 180°C (350°F). Line a 9x12 inch baking dish with parchment paper.
Melt butter and mix with oil. Let cool slightly.
Add sugar and mix well. Allow to cool if hot.
Stir in egg and vanilla extract.
Add flour, baking powder, and salt. Mix until just combined.
Fold in cherries and chocolate chips.
Pour batter into prepared pan, spread evenly.
Bake for 35 minutes or until golden on top.
Cool for 20 minutes before slicing. Optional: drizzle melted chocolate on top.
Notes
Use fresh cherries for best flavor. Be gentle when handling the batter to keep it tender.
