Ingredients

Crust

  • 200 g biscuit maisena (can be milk or plain)
  • 100 g unsalted butter (melted)
  • 230 g crystal sugar
  • 100 g wheat flour
  • 45 g cocoa powder (100% cacao)

Filling & Topping

  • 100 mL vegetable oil (neutral flavor)
  • 40 mL water
  • 2 units eggs
  • 1 g refined salt
  • 25 g bittersweet chocolate (chips or chopped)
  • 10 g gelatin powder (colorless, flavorless)
  • 60 mL water (for gelatin, 25-30°C)
  • 200 g crystal sugar
  • 20 g liquid glucose (transparent)
  • 95 mL water (for syrup, 25-30°C)
  • 2 drops vanilla essence
  • 50 g bittersweet chocolate
  • 5 g coconut oil

Instructions 

  • Prepare the crust by blending the cookies and melted butter, then press into a pan and chill.
  • Make the chocolate filling by melting chocolate and mixing with gelatin dissolved in water, then combine with sugar syrup and vanilla.
  • Pour the filling over the crust and refrigerate until set.
  • Top with marshmallow and chocolate, then chill before serving.
