A moist and fluffy coconut cake with a rich coconut flavor, perfect for a tropical treat.

Ingredients

Wet ingredients

  • 4 pieces eggs (cerca de 50g cada, pode estar gelado)
  • 50 g vegetable oil
  • 375 g crystal sugar
  • 5 g vanilla extract (opcional)

Dry ingredients

  • 300 g wheat flour
  • 50 g sweetened shredded coconut (úmido e adoçado)
  • 10 g baking powder
  • 1.5 g refined salt

Coconut liquid

  • 400 g full-fat coconut milk
  • 150 g water
  • 150 g crystal sugar
  • 100 g sweetened shredded coconut flakes (úmido e adoçado, ou ralado e seco)

Instructions 

  • Mix wet ingredients and combine with dry ingredients.
  • Pour batter into a greased baking pan and bake at 350°F for 40 minutes.

Notes

Keep the cake moist by adding coconut milk to the batter.
