A rich and decadent cake combining dried apricots, walnuts, and chocolate for a delightful treat.

Ingredients

Dry ingredients

  • 50 g cocoa powder
  • 350 g sugar (cristal)
  • 275 g flour (wheat flour)
  • 3 g salt (refined)
  • 10 g baking powder (chemical leavening)

Wet ingredients

  • 250 g water (fervent)
  • 150 g oil (vegetal)
  • 3 units eggs (can be cold)
  • 5 g vanilla essence (or extract)

Dried apricots and nuts

  • 300 g dried apricots (seco)
  • 150 g water (fervent)
  • 150 g sugar (cristal, if needed)
  • 150 g walnuts (in pieces)

Chocolate and cream

  • 200 g semi-sweet chocolate (chips or chopped bar)
  • 200 g heavy cream (35% fat)
  • 100 g water
  • 100 g sugar (cristal)
  • 10 g vanilla essence

Instructions 

  • Mix dry ingredients and set aside.
  • Combine wet ingredients and blend well.
  • Fold in dried apricots, walnuts, and chocolate.
  • Pour batter into a greased pan and bake at 350°F for 45 minutes.
  • Prepare the chocolate ganache by heating cream and pouring over chocolate, then mix until smooth.
  • Spread ganache over cooled cake before serving.

Notes

Ensure dried apricots are chopped finely for even distribution.
