A rich and smooth Swiss Meringue Buttercream with chocolate and caramel flavors, perfect for decorating cakes and cupcakes.

Ingredients

Egg Whites and Sugar

  • 3 units clara (about 90g)
  • 150 g açúcar refinado

Butter and Flavoring

  • 200 g manteiga sem sal (em cubos semi-gelada)
  • 5 mL extrato de baunilha (OU 1-2mL essência)

Chocolate

  • 200 g chocolate meio amargo (para cada 400g buttercream tradicional, derretido)

Caramel

  • 75 g doce de leite cremoso/pastoso (para cada 200g buttercream tradicional)

Instructions 

  • Mix egg whites and sugar in a clean pan.
  • Cook on low heat, stirring until sugar dissolves, about 2-3 minutes.
  • Test with fingers to ensure sugar is dissolved; mixture will be more liquid.
  • Transfer to a bowl, beat on high until cooled, about 10-15 minutes.
  • Add butter gradually once mixture is cool, then vanilla.
  • Flavor as desired; refrigerate to set, then bring to room temperature before use.

Notes

Ensure butter is semi-gelada for best texture.
