A rich and creamy goat milk caramel from Brazil, perfect for spreading or drizzling over desserts.

leite de cabra integral UHT
(Use full-fat goat milk)

açúcar cristal
(Granulated sugar)

bicarbonato de sódio
(About 1/2 teaspoon)

extrato de baunilha
(Vanilla extract or bean)
Instructions
Mix milk, sugar, and bicarbonate in a large, tall pan.
Cook over medium heat, stirring until sugar and bicarbonate dissolve.
Add vanilla at the end or during cooking for a stronger flavor, depending on preference.
Simmer, stirring occasionally, until the mixture thickens and reaches a firm but pourable consistency, about 1.5 hours.
Remove vanilla bean if used. Store in a jar; it will thicken upon cooling.
Notes
If too thick after cooling, thin with warm water or milk.
