Ingredients

  • 0.75 cup sugar (crystal or refined)
  • 0.5 cup heavy cream (fresco or pasteurized, >35% fat)
  • 15 mL vanilla extract (or 5 mL essence)
  • 3 g yeast extract (Marmite, optional)

Instructions 

  • Heat a large pan over medium-high heat and melt the sugar.
  • Stir occasionally until the sugar turns amber.
  • Add the cream, vanilla, and yeast extract (if using), then reduce heat and cook for 5-6 minutes.
  • Remove from heat and transfer to a container. Cool to thicken.

Notes

Store in a sealed container; it will thicken as it cools.
