A innovative way to create flavorful passion fruit caviar using agar, perfect for garnishing dishes or drinks.

Ingredients

Agar

  • 1-2 grams ágar (per 100mL of liquid)
  • 100 mL Líquido saborizado escolhido
  • 1 tablespoon Azeite ou óleo de sabor suave gelado

Instructions 

  • Mix 1-2g agar with 100mL of flavored liquid. Heat until boiling, maintaining above 45°C.
  • Use a syringe or dropper to form droplets into cold oil or olive oil. Let solidify.
  • Rinse the droplets in water to remove excess oil. Keep refrigerated until use.

Notes

Ensure the oil is very cold to help the droplets solidify quickly.
