Instructions
Prepare the crust by crushing the cookies and mixing with melted butter, then press into the base of a springform pan.
Mix cream cheese, sugar, eggs, lemon zest, lemon juice, vanilla, and salt until smooth.
Pour filling over the crust and bake at 325°F (160°C) for about 60 minutes until set.
Allow to cool, then top with fruit preserves and serve.
