Instructions
Mix water, sugar, salt, and butter in a pan; melt butter and dissolve sugar and salt over medium heat.
Add flour all at once; stir continuously until dough forms and is uniform.
Transfer dough to a bowl; let cool for 2 minutes.
Add egg gradually to dough using a mixer with a paddle until smooth.
Pipe dough into star-shaped discs on parchment; freeze for 5 minutes.
Heat oil to 180°C; fry discs until golden, pressing center lightly.
Drain on paper towels; coat with cinnamon sugar mixture.
Assemble by placing a scoop of ice cream between two churro discs; serve immediately.
