Instructions
Cook butter until browned and fragrant, about 3-4 minutes, then let cool slightly.
Pour warm butter into a heatproof bowl and add sugars, salt, egg, yolk, and vanilla. Mix for 30 seconds, rest 3 minutes, repeat twice.
Mix in flour and baking soda until combined. Fold in chocolates.
Portion dough into 45-50g balls, place on baking sheet, and bake at 180°C (356°F) for 14-15 minutes until edges are golden.
Cool on baking sheet before transferring.
Notes
For best results, freeze dough balls and bake directly from frozen.
