A delightful coffee-flavored crème brûlée with a crisp caramelized sugar topping, perfect for coffee lovers.

Ingredients

Dairy

  • 1.25 cups skim or whole milk (300 mL)
  • 1 cup cups fresher cream (250 g)

Coffee

  • 2 teaspoons tsp instant coffee (6 g)

Citrus

  • 1/2 teaspoon orange zest (raspas da casca)
  • 0.5 grams refined salt
  • 3/4 cup granulated sugar (100 g)

Caramelizing Sugar

  • as needed granulated sugar for caramelizing

Instructions 

  • Preheat oven to 350°F (180°C). Prepare a water bath with 1.5L boiling water and set aside a baking dish for ramekins.
  • Combine milk, cream, coffee, and orange zest in a saucepan. Heat gently, stirring to blend.
  • In a bowl, whisk egg yolks and sugar until pale. Slowly add hot milk mixture, stirring constantly.
  • Strain the custard through a fine sieve into a jug. Divide among ramekins.
  • Place ramekins in the baking dish, pour hot water halfway up sides. Bake for 40 minutes until just set.
  • Cool, then refrigerate for 6-8 hours. Before serving, sprinkle sugar on top and caramelize with a torch.

Notes

Ensure the sugar is caramelized just before serving for the best texture.
