Instructions
Preheat oven to 350°F (180°C). Prepare a water bath with 1.5L boiling water and set aside a baking dish for ramekins.
Combine milk, cream, coffee, and orange zest in a saucepan. Heat gently, stirring to blend.
In a bowl, whisk egg yolks and sugar until pale. Slowly add hot milk mixture, stirring constantly.
Strain the custard through a fine sieve into a jug. Divide among ramekins.
Place ramekins in the baking dish, pour hot water halfway up sides. Bake for 40 minutes until just set.
Cool, then refrigerate for 6-8 hours. Before serving, sprinkle sugar on top and caramelize with a torch.
Notes
Ensure the sugar is caramelized just before serving for the best texture.
