A rich and creamy dessert combining the classic French crème brûlée with the sweet, caramel flavor of Brazilian doce de leite.

Ingredients

Dairy

  • 150 mL milk, skim
  • 250 g heavy cream (preferably with >35% fat)
  • 325 g creamy caramelized milk spread (doce de leite)
  • 85 g egg yolks (about 5 yolks)
  • 10 mL vanilla extract (optional)

Instructions 

  • Preheat oven to 180°C (356°F). Prepare a water bath and set aside.
  • Heat milk until small bubbles form, about 3-5 minutes.
  • Remove from heat, add cream, and mix well.
  • Add doce de leite and stir until fully dissolved.
  • Whisk in egg yolks just until combined, avoid creating foam.
  • Add vanilla extract, if using, and mix gently.
  • Divide mixture into ramekins, place in water bath, and bake for 40-45 minutes until set but slightly jiggly.
  • Cool, then refrigerate for 6-8 hours or overnight.
  • Before serving, sprinkle sugar on top and caramelize with a torch for a crispy top.

Notes

Ensure the water bath is hot before placing the ramekins to prevent cracking.
