A delicious passion fruit curd that can be used in tarts, as a topping, or enjoyed on its own. Quick to prepare with fresh, tangy flavor.

Ingredients

Fruit and Sugar

  • 0.21 cups passion fruit pulp (unsweetened) (about 60-65g)
  • 0.5 cups granulated sugar
  • 2 units egg yolks
  • 2 tablespoons unsalted butter (cold, cubed)
  • 1 teaspoon water (for rinsing seeds)

Instructions 

  • Microwave passion fruit pulp for 25 seconds, then strain to remove seeds. Add 1 tsp water to rinse seeds and combine with pulp, yielding about 65g.
  • Beat egg yolks and sugar until pale. Add passion fruit pulp and mix for 3 minutes.
  • Cook mixture over low heat, stirring constantly for 5-9 minutes until thickened. Do not curdle the eggs.
  • Add cold butter gradually, stirring until smooth. Strain while hot and let cool.
  • Allow to cool; it will thicken further. Use as filling, topping, or enjoy on its own.

Notes

Keep refrigerated and consume within 3 days for best quality.
