A delicious passion fruit curd that can be used in tarts, as a topping, or enjoyed on its own. Quick to prepare with fresh, tangy flavor.
Ingredients
Fruit and Sugar

passion fruit pulp (unsweetened)
(about 60-65g)

(for rinsing seeds)
Instructions
Microwave passion fruit pulp for 25 seconds, then strain to remove seeds. Add 1 tsp water to rinse seeds and combine with pulp, yielding about 65g.
Beat egg yolks and sugar until pale. Add passion fruit pulp and mix for 3 minutes.
Cook mixture over low heat, stirring constantly for 5-9 minutes until thickened. Do not curdle the eggs.
Add cold butter gradually, stirring until smooth. Strain while hot and let cool.
Allow to cool; it will thicken further. Use as filling, topping, or enjoy on its own.
Notes
Keep refrigerated and consume within 3 days for best quality.
