Instructions
Grate or chop the chocolate. Place most of it in a microwave-safe bowl.
Microwave at high power for 15 seconds, then stir. Repeat until chocolate begins to melt.
If needed, microwave for additional 5 seconds, then stir. Check temperature with a thermometer.
Add reserved grated chocolate to lower temperature and stir until smooth.
Use the melted chocolate for coating, decorating, or shaping as desired.
Notes
