A rustic and flavorful fruit galette combining pears and apples with warm spices, perfect for a cozy dessert.

Ingredients

Dough

  • 180 g farinha de trigo
  • 30 g açúcar refinado
  • 1 g sal refinado
  • 110 g manteiga sem sal (gelada; em cubos) (cut into cubes)
  • 2 tbsp água (fria, 20-40mL) (add gradually)

Filling

  • 2 small peras (~100g/cada) (sliced into half-moons)
  • 2 small maçãs vermelhas gala/fuji (~100g/cada) (sliced into half-moons)
  • 50 g açúcar mascavo
  • a gosto canela em pó
  • a gosto gengibre em pó
  • a gosto noz-moscada ralada na hora
  • a gosto raspas de limão siciliano
  • a gosto cravo em pó
  • 15 mL extrato de baunilha
  • 1 egg ovo (batido)
  • a gosto açúcar cristal (para polvilhar)

Instructions 

  • Combine flour, sugar, salt, and butter; rub until crumbly.
  • Add cold water gradually, mixing just until dough forms. Chill for 30 minutes.
  • Preheat oven to 180°C (350°F).
  • Slice fruits, mix with sugar and spices.
  • Roll out dough to 0.5cm thickness, place on baking sheet.
  • Arrange fruit slices in a circle, fold edges over.
  • Brush edges with beaten egg, sprinkle with sugar.
  • Bake for 30 minutes until golden.
  • Serve warm or at room temperature, optionally with ice cream.

Notes

Use cold butter for a flaky crust and avoid overworking the dough.
