A delicious homemade strawberry jam infused with vanilla and ginger, perfect for spreading or gifting.

Ingredients

Fruits and Citrus

  • 650 g strawberries (cleaned and without green part) (Cut in half lengthwise)
  • 1 l orange juice (from 1 orange)
  • 0.5 l limão siciliano juice (from 1/2 limão siciliano)
  • 10 cm orange peel
  • 5 cm limão siciliano peel
  • 2 teaspoons fresh ginger (grated)
  • 1 fava vanilla bean (split and scraped)
  • 0.25 cup sugar (refined sugar, approx 215g used)

Instructions 

  • Cut strawberries in half lengthwise.
  • Split vanilla bean and scrape seeds.
  • Combine all ingredients in a large pot: strawberries, citrus juices and peels, vanilla, ginger, and sugar.
  • Cook over medium-low heat, stirring until sugar dissolves. Simmer for 15-20 minutes until thickened.
  • Mash strawberries to desired consistency.
  • Transfer to sterilized jars, cool, and store. Freeze for longer storage if needed.

Notes

Use fresh, ripe strawberries for best flavor. Store in a cool, dry place or freeze for extended shelf life.
