Instructions
Poach or cook eggs at low temperature for 60 minutes at 63-63.5°C. Carefully remove the whites, leaving the yolks semi-cooked.
Season flour, panko, and beaten eggs with salt and pepper. Coat each semi-cooked yolk first in flour, then in egg, then in panko gently.
Heat oil to 180-185°C. Fry the coated eggs for 30-40 seconds until golden. Remove and drain on paper towels.
Serve immediately.
Notes
Ensure oil is at the right temperature to prevent over-browning.
