Ingredients

  • 4 pieces ovos (para fritar) (for frying)
  • 1.5 cups Farinha de trigo
  • 4 pieces ovos (batido para empanar)
  • 1.5 cups farinha panko (farinha de rosca oriental)
  • 0.5 teaspoon Sal refinado
  • 0.25 teaspoon pimenta do reino moída
  • 0.5 cups óleo vegetal (para fritar)

Instructions 

  • Poach or cook eggs at low temperature for 60 minutes at 63-63.5°C. Carefully remove the whites, leaving the yolks semi-cooked.
  • Season flour, panko, and beaten eggs with salt and pepper. Coat each semi-cooked yolk first in flour, then in egg, then in panko gently.
  • Heat oil to 180-185°C. Fry the coated eggs for 30-40 seconds until golden. Remove and drain on paper towels.
  • Serve immediately.

Notes

Ensure oil is at the right temperature to prevent over-browning.
