A delicious traditional Middle Eastern fried meat and wheat snack, perfect for sharing and full of rich flavors.

Instructions
Pour boiling water over the wheat, mix, cover with plastic wrap and a plate. Let sit for 1 hour.
Refog the second beef with garlic and onion, season with salt, pepper, pimenta síria, and zaatar or cinnamon if unavailable.
Chop mint and parsley finely just before use.
Mix hydrated wheat, onion, garlic, and cooked beef. Add herbs and season to taste.
Shape about 2 oz of mixture into a ball, perforate with wet finger, then fill with refried beef, shaping into a pointed kibe.
Deep fry in hot oil (170-180°C) until golden brown.
Serve with lemon, pimenta, or preferred condiments.
Notes
Ensure oil is hot enough before frying to achieve a crispy exterior.
