A delicious traditional Middle Eastern fried meat and wheat snack, perfect for sharing and full of rich flavors.

Ingredients

Meat

  • 1.1 lb ground beef (I, can be patinho or coxão mole)
  • 0.44 lb ground beef (II, for filling, can be patinho or coxão mole)
  • 17.6 oz Wheat for Kibe
  • 0.66 cup Onion (about 2 medium, chopped)
  • 2.5 tablespoons Garlic (about 6 cloves, grated)
  • 0.25 cup Fresh Mint (whole leaves)
  • 0.25 cup Fresh Parsley (leaves, optional)
  • to taste Refined Salt
  • enough Vegetable Oil (for refrying and frying)
  • to taste Black Pepper (ground)
  • to taste Syria Pepper
  • to taste Zaatar
  • optional Cinnamon Powder (use if no pimenta síria and zaatar)
  • 1 piece Part of Leek (hard parts removed)
  • 1 large Carrot
  • 2 large Additional Onion
  • 1 stalk Salsa Stalk
  • to taste Fresh Chives
  • to taste Black Peppercorns
  • 2 leaves Bay Leaves (optional)
  • 1 liter Water
  • 2 cubes Beef Bouillon Cubes (optional, low salt preferred)

Instructions 

  • Pour boiling water over the wheat, mix, cover with plastic wrap and a plate. Let sit for 1 hour.
  • Refog the second beef with garlic and onion, season with salt, pepper, pimenta síria, and zaatar or cinnamon if unavailable.
  • Chop mint and parsley finely just before use.
  • Mix hydrated wheat, onion, garlic, and cooked beef. Add herbs and season to taste.
  • Shape about 2 oz of mixture into a ball, perforate with wet finger, then fill with refried beef, shaping into a pointed kibe.
  • Deep fry in hot oil (170-180°C) until golden brown.
  • Serve with lemon, pimenta, or preferred condiments.

Notes

Ensure oil is hot enough before frying to achieve a crispy exterior.
