Experience the warm, spiced sweetness of Finnish cinnamon rolls with this traditional recipe, perfect for cozy mornings or special treats.

Ingredients

Dough

  • 510 g all-purpose flour (divided)
  • 10 g instant dry yeast
  • 100 g unsalted butter (melted)
  • 250 mL whole milk (warm)
  • 85 g granulated sugar
  • 0.5 tsp refined salt
  • 1 tsp crushed cardamom (less than 1 tsp)
  • 1 large egg (at room temperature)
  • 50 g unsalted butter (softened)
  • 1.5 tbsp cinnamon powder
  • 50 g granulated sugar (use double if using brown sugar)

Instructions 

  • Warm the milk to touch, then mix in sugar, salt, cardamom, and egg.
  • Mix half the flour with yeast, then add liquids, gradually incorporate remaining flour and butter until dough is slightly sticky.
  • Sovet the dough until smooth (about 10 minutes), then let it ferment covered for 40 minutes.
  • Prepare filling by mixing cinnamon, sugar, and softened butter until smooth.
  • Roll out dough into a rectangle, spread filling, roll into a log, and cut into trapezoid shapes.
  • Place on baking sheets, ferment for 30 minutes, then brush with egg and sprinkle sugar.
  • Bake at 200-225°C (392-437°F) for 10-15 minutes until golden.

Notes

Store in the refrigerator; the sugar and butter may make the surface sticky.
