Ingredients

Meat and Vegetables

  • 1.2 lb chicken breast with skin
  • 1 medium onion (large, in chunks)
  • 2 small carrots (small, peeled, large pieces)
  • 2 cloves garlic
  • 0.5 cup water
  • 1 tablespoon olive oil
  • to taste refined salt
  • to taste black pepper
  • optional fresh rosemary

Lasagna and Cheese

  • 7.05 oz Fortaleza Express semolina lasagna
  • 7.05 oz sliced mozzarella cheese
  • 14.1 oz canned peeled tomatoes
  • 1 small onion (chopped)
  • 2 cloves garlic (chopped)
  • 1 tablespoon olive oil
  • 1.5 oz parmesan cheese, grated
  • to taste basil leaves
  • to taste spicy hot sauce
  • to taste refined salt
  • to taste ground black pepper

Instructions 

  • Prepare the chicken broth with water, onion, carrots, garlic, salt, pepper, and optional rosemary. Cook until vegetables are tender and chicken is cooked through.
  • Cook the lasagna noodles according to package instructions. Drain and set aside.
  • In a pan, sauté chopped onion and garlic in olive oil. Add canned tomatoes, season with salt, pepper, and hot sauce. Simmer to make the sauce.
  • Layer cooked lasagna, chicken, tomato sauce, and cheese in a baking dish. Repeat layers and top with Parmesan and basil.
  • Bake at 180°C (350°F) for 30-40 minutes until bubbly and golden.

Notes

For a spicier flavor, add more hot sauce to the sauce layer.
