Delight in these fragrant cinnamon-flavored madeleines, perfect for a quick, elegant treat.

Ingredients

Dough

  • 3 pieces eggs (room temperature)
  • 130 g sugar (cristal)
  • 0.125 tsp salt (refined)
  • 1 tbsp vanilla extract (or 1-2mL essence)
  • 1 tsp baking powder
  • 175 g all-purpose flour
  • 0.5 tsp cinnamon (powder)
  • 120 g unsalted butter (melted, room temperature)

Instructions 

  • Beat eggs, sugar, and salt for 5 minutes, then add vanilla.
  • Sift flour, baking powder, and cinnamon; gradually add to egg mixture, folding gently. Add melted butter and mix well.
  • Cover and chill for at least 1 hour, up to 3 hours. Prepare molds with butter and flour if not non-stick.
  • Fill molds about 3/4 full, avoiding overfilling to prevent doming. Bake at 425°F for 8-9 minutes until golden.
  • Remove from oven, cool on a rack, and optionally dust with powdered sugar.

Notes

Do not overfill the molds to achieve the classic hump.
