Ingredients

Eggs

  • 1 piece gema (gelada)
  • 1-3 teaspoons mostarda Dijon (adjust to taste)
  • 1 teaspoon suco de limão taiti
  • 150 mL óleo vegetal
  • a gosto sal refinado
  • a gosto pimenta do reino moída

Instructions 

  • In a bowl, whisk the egg yolk until broken. Add mustard and lemon juice, mixing well.
  • Gradually add oil in a thin stream, mixing constantly until emulsified.
  • Season with salt and pepper to taste. Mix well and taste again.
  • Transfer to a container, refrigerate, and consume within one day.
