A creamy and flavorful mayonnaise perfect for sandwiches, salads, and dips, inspired by Heinz's classic recipe.

Ingredients

Oil

  • 0.75 cup vegetable oil (70%)

Vinegar

  • 2 tablespoons alcohol vinegar

Water

  • 1 tablespoon water

Eggs

  • 1 large egg yolk from free-range chicken eggs (5.4%)

Sugar

  • 1 teaspoon sugar

Mustard

  • 1 teaspoon mustard (water, mustard seeds, vinegar, salt, spices)

Salt

  • 0.5 teaspoon salt

Thickener

  • 0.25 teaspoon gums (guar, xanthan)

Antioxidant

  • a pinch EDTA sodium and calcium

Instructions 

  • Combine egg yolk, vinegar, water, sugar, mustard, and salt in a blender.
  • Slowly add oil while blending until thickened and smooth.
  • Mix in gums and antioxidants if desired.

Notes

Store in a sealed container in the refrigerator for up to a week.
