Instructions
Preheat oven to 180°C (356°F). Prepare the baking pan with oil and parchment paper. Reserve. Separate a 15cm diameter ring.
Cream butter, oil, and sugar for 5 minutes until smooth using a mixer.
Add eggs one at a time, beating well after each addition for 3-4 minutes.
Add yogurt and vanilla extract, mix well.
Incorporate dry ingredients and mix until well combined.
Pour batter into prepared pan, level surface. Bake for 40-45 minutes until golden and a toothpick comes out clean.
Cool before removing from pan. Chill in fridge for 1 hour for best texture.
Remove from pan, peel off parchment, and invert onto a clean surface. Use a 15cm ring to cut three disks, assembling as desired.
Notes
For a more even bake, ensure ingredients are at room temperature before mixing.
