Instructions
Preheat oven to 180°C. Prepare a 32x22cm (or 34x24cm) pan, line with parchment, and dust with cocoa powder if desired.
Mix dry ingredients: flour, cocoa, baking powder, baking soda, salt. Set aside.
Combine melted chocolate and yogurt. Set aside.
Dissolve coffee and vanilla in water if not using extract. Set aside.
Cream butter, sugar, and oil until smooth, about 5 minutes.
Add eggs one at a time, beating well after each addition.
Mix in yogurt and chocolate mixture.
Gradually add dry ingredients, mixing until incorporated.
Fold in chocolate chips if using.
Pour batter into prepared pan, level surface.
Bake at 180°C for 30-35 minutes. Check with a toothpick.
Cool before removing from pan. Chill in fridge for 1 hour before serving.
Notes
For layered effect, cut the cooled cake into three layers using the 15cm diameter ring as a guide.
