A basic and versatile pie crust perfect for savory or sweet fillings. Easy to prepare with simple ingredients.

Ingredients

Dry ingredients

  • 360 g farinha de trigo
  • 50 g açúcar refinado (for savory use 10g)
  • 3 g sal refinado

Wet ingredients

  • 220 g manteiga sem sal (gelada, em cubos)
  • 2 tbsp água fria (about 40-80mL)

Instructions 

  • Combine flour, sugar, salt, and butter in a bowl.
  • Fry the butter with fingertips until crumbly, like wet sand. Use a processor if desired.
  • Add water gradually until dough comes together, about 3 tbsp (55-60mL).
  • Mix just enough to combine, then shape into a disc, wrap in plastic, and refrigerate for at least 30 minutes.
  • Roll out on a floured surface to max 0.5cm thickness and line your baking dish.
  • Freeze or chill before baking. Can be frozen if not used immediately.

Notes

Keep the dough cold for best results and avoid overworking it.
