Deliciously rich and chewy cookies inspired by the famous Neiman Marcus recipe, packed with chocolate and a perfect balance of sweetness.

Ingredients

Dry ingredients

  • 240 g farinha de trigo
  • 3 g fermento químico em pó ((1/2 teaspoon))
  • 3 g bicarbonato de sódio ((1/2 teaspoon))
  • 3 g sal refinado ((1/2 teaspoon))
  • 3 g café solúvel tradicional ou forte ((1.5 teaspoon))
  • 113 g manteiga sem sal
  • 140 g açúcar mascavo
  • 30 g açúcar cristal
  • 1 unit ovo ((at room temperature))
  • 15 mL extrato de baunilha ((or 2 mL essência))
  • 225 g chocolate meio amargo ((chips or chopped bar))
  • 75 g gotas de chocolate butterscotch ou de doce de leite ((optional))

Instructions 

  • Preheat oven to 170-180°C and line baking sheets with parchment paper.
  • Mix dry ingredients: flour, baking powder, baking soda, coffee, and salt. Set aside.
  • Cream butter with sugars until creamy, about 5 minutes. Add egg and vanilla, mix well.
  • Gradually add dry mixture to wet, mix on low. Stir in chocolate chips and optional butterscotch chips.
  • Form dough into 16 balls using a scoop or spoon. Place on baking sheet, spacing 4-5cm apart. Slightly flatten tops.
  • Bake for 20 minutes, or 25 minutes for extra crunch. Cool for 5-7 minutes before transferring to a wire rack.
  • Cookies can be frozen raw; bake directly from freezer, adding 3-5 minutes to baking time.
