This rustic bread recipe requires minimal ingredients and yields a crusty, flavorful loaf with a simple process.

Ingredients

Dough

  • 400 g farinha de trigo
  • 4 g fermento biológico fresco (see note)
  • 8 g sal refinado
  • 300 g água (see note)

Instructions 

  • Misture flour, yeast, salt, and water until moist, adding water gradually.
  • Cover and let rest for about 6 hours, adjusting for temperature.
  • Fold the dough a few times, dust with flour, and shape into a ball. Rest for 15 minutes.
  • Transfer to floured surface, reshape, and let rest for 30-45 minutes.
  • Preheat oven to 230°C. Prepare parchment with flour and transfer dough onto it.
  • Score the top of the dough, cover with a metal bowl, and bake for 35 minutes.
  • Remove cover, continue baking for 30-35 minutes until golden and hollow sounding.
  • Cool for at least 30 minutes before slicing.

Notes

Ensure the dough is well rested for better flavor and texture.
