A delicious and moist banana cake with a hint of orange and optional walnuts, perfect for any occasion.

Ingredients

Dry ingredients

  • 195 g flour (all-purpose)
  • 0.5 g refined salt (a pinch)
  • 6 g baking soda
  • 2 g cinnamon (ground)

Orange

  • 1 unit orange (zest and juice)
  • 3 bananas bananas (well ripe)
  • 75 g butter (melted)
  • 1 egg egg (room temperature)
  • 175 g sugar (crystal)

Nuts (optional)

  • 75 g nuts (chopped)

Instructions 

  • Preheat oven to 180°C. Grease and flour the baking pan.
  • Grate orange zest and extract 90mL of juice.
  • Mix dry ingredients and set aside.
  • Mash bananas with a fork.
  • Combine bananas, orange zest and juice, melted butter, egg, and sugar; mix until smooth.
  • Add dry mixture and stir until incorporated; fold in half of the nuts.
  • Pour batter into prepared pan; top with remaining nuts.
  • Bake for 40-45 minutes; test with a toothpick.
  • Cool, then serve. Keep refrigerated for longer storage.

Notes

Use ripe bananas for best flavor and texture.
