Ingredients

Flours and Leavening

  • 260 g farinha de trigo
  • 525 g farinha de trigo (+ para polvilhar e trabalhar)
  • 16 g fermento biológico seco instantâneo

Wet ingredients

  • 175 g leite integral (temperatura: 27ºC + 10mL se necessário)
  • 197 g ovo (cerca de 3 e 3/4 ovos, reserve o restante)
  • 150 g leite integral

Sugar and sweeteners

  • 115 g açúcar cristal
  • 15 g glicose líquida (transparente)

Sal and flavorings

  • 21 g sal refinado
  • 10 g raspa de laranja
  • 10 g raspas de limão siciliano
  • 6 g fermento biológico seco instantâneo

Fats and Butter

  • 148 g manteiga sem sal (em cubos; temperatura: 15ºC + 20g para untar)
  • 30 g manteiga sem sal (gelada; cubos; ~7g cada cubo)

Fruits and Candied Peel

  • 120 g uva-passa escura (sem semente)
  • 120 g uva-passa branca (sem semente)
  • 150 g casca de laranja cristalizada (picada)
  • 50 g casca de limão cristalizada (picada)
  • 30 g manteiga sem sal (gelada; cubos; ~7g cada cubo)

Instructions 

  • Combine dry ingredients and prepare the dough.
  • Add wet ingredients and knead until smooth.
  • Incorporate candied fruits and let the dough rise.
  • Shape the dough and bake at 180°C for about 60 minutes.
