Delicious fluffy American-style pancakes perfect for a hearty breakfast or brunch.

Ingredients

Liquid ingredients

  • 120 mL leite integral (whole milk)
  • 110 mL iogurte sem sabor (plain yogurt)
  • 40 g manteiga sem sal (melted, 3 tbsp + for greasing)
  • 1 unit ovo

Dry ingredients

  • 140 g farinha de trigo (all-purpose flour)
  • 30 g açúcar cristal (crystal sugar, 2 tbsp)
  • 12 g fermento químico em pó (baking powder, 2 tsp)
  • 3 g sal refinado (1/2 tsp)
  • 5 mL extrato de baunilha (vanilla extract, optional)

Instructions 

  • Mix all liquid ingredients and egg, then set aside. Add vanilla if using.
  • Combine dry ingredients. Add liquids to dry and mix until homogeneous. If too thick, add 20-40mL milk gradually.
  • Heat a non-stick or regular skillet over low heat, grease with butter. Pour batter to form a disc.
  • Cook until bubbles form (2-3 min), then flip and cook until golden.
  • Be patient and avoid pressing pancakes against the pan.

Notes

For fluffier pancakes, let the batter rest for a few minutes before cooking.
