Instructions
Mix all liquid ingredients and egg, then set aside. Add vanilla if using.
Combine dry ingredients. Add liquids to dry and mix until homogeneous. If too thick, add 20-40mL milk gradually.
Heat a non-stick or regular skillet over low heat, grease with butter. Pour batter to form a disc.
Cook until bubbles form (2-3 min), then flip and cook until golden.
Be patient and avoid pressing pancakes against the pan.
Notes
For fluffier pancakes, let the batter rest for a few minutes before cooking.
