Pão Doce de Chocolate e Coco

Delight in this sweet, chocolate and coconut-filled bread, perfect for a special treat or breakfast.

Ingredients

Dough

  • 150 g flour de trigo
  • 150 mL water
  • 7 g instant dry yeast
  • 400 g additional flour de trigo (may need extra)
  • 100 g crystal sugar
  • 100 mL warm water
  • 10 g milk powder
  • 85 g unsalted butter (softened)
  • 3 g refined salt
  • 200 g white chocolate (chopped)
  • 130 g milk chocolate (chopped)
  • 50 g unsalted butter (softened)
  • 15 g dry shredded coconut (unsweetened)

Instructions 

  • Mix all sponge ingredients, cover, and ferment for 35 minutes.
  • Dissolve milk powder in warm water.
  • Add sugar, milk mixture, salt, and gradually add flour in 3 parts, then incorporate softened butter and knead for 5 minutes.
  • Let the dough rise until nearly doubled, about 20-25 minutes.
  • Mix white and milk chocolates. Roll out dough to 60x30cm, spread butter, distribute chocolates, and sprinkle coconut.
  • Roll the dough lengthwise, cut into 4cm slices, and place in a greased baking dish. Let rise for 25 minutes.
  • Bake at 200°C for 45 minutes, then lower to 180°C and bake until golden. Optionally, brush with melted butter.

Notes

Ensure the dough is not too sticky for easier rolling.
