Instructions
Prepare popcorn with oil as usual.
Cook water, salt, sugar, and butter until popcorn is soft, then blend and strain to get liquid.
Make sugar syrup by boiling water and sugar until slightly thickened.
Cook remaining sugar and water to 170°C for caramel.
Add remaining water and sugar syrup to caramel, then cool.
Mix caramel with lecithin using a mixer for 6 minutes to create foam.
Pour the liquid popcorn cream into a glass, add foam, and serve.
Notes
Ensure to handle hot caramel carefully to avoid burns.
