A decadent Brazilian dessert combining smoky milk, white caramelized chocolate, and a smooth pudding texture.

Ingredients

Dairy and Eggs

  • 2 pieces eggs
  • 150 mL smoked milk
  • 100 mL whole milk
  • 60 g crystal sugar
  • 60-80 g white caramelized chocolate (approximate)
  • Manteiga sem sal ( para untar) unsalted butter (for greasing)

Instructions 

  • Grease ramekins with butter.
  • Melt the caramelized white chocolate and layer it in the ramekins.
  • Mix the milks, sugar, and leftover chocolate (15-20g).
  • Warm slightly to melt sugar, do not boil.
  • Beat eggs until well combined.
  • Add milk mixture to eggs, mix until smooth.
  • Strain the mixture.
  • Pour into ramekins, cover with plastic wrap or foil.
  • Cook in a water bath for 18-20 mins on low heat, then chill for at least 4 hours.
  • Unmold and serve cold or slightly warmed.

Notes

Ensure the water bath is hot enough to cook evenly.
