A quick and flavorful Chinese-style bok choy stir-fry with toasted sesame and ginger, perfect served with rice and kimchi.
Ingredients

bok choy (chingensai, acelga chinesa)

Instructions
Cut bok choy leaves and stalks into manageable pieces; set aside.
In a wok or skillet, toast sesame seeds until they start to pop and darken; set aside.
Heat toasted sesame oil, sauté garlic and ginger, then add bok choy and cook for 2-3 minutes until wilted.
Add sake, stir, then add soy sauce and cook for 1-2 minutes until liquid reduces. Mix in toasted sesame seeds and serve.
Notes
For added texture, hydrate the vermicelli before adding to the stir-fry.
