A quick and flavorful Chinese-style bok choy stir-fry with toasted sesame and ginger, perfect served with rice and kimchi.

Ingredients

Vegetables

  • 12 leaves bok choy (chingensai, acelga chinesa) (large leaves and stalks)
  • 2.5 teaspoons toasted white sesame seeds
  • 3 teaspoons toasted sesame oil
  • 2 cloves garlic (medium)
  • 1 teaspoon fresh grated ginger
  • 2 teaspoons sake mirin (culinary sake)
  • 3 teaspoons shoyu (soy sauce)
  • 30 grams vermicelli (or harusame, optional) (hydrated if used)

Instructions 

  • Cut bok choy leaves and stalks into manageable pieces; set aside.
  • In a wok or skillet, toast sesame seeds until they start to pop and darken; set aside.
  • Heat toasted sesame oil, sauté garlic and ginger, then add bok choy and cook for 2-3 minutes until wilted.
  • Add sake, stir, then add soy sauce and cook for 1-2 minutes until liquid reduces. Mix in toasted sesame seeds and serve.

Notes

For added texture, hydrate the vermicelli before adding to the stir-fry.
