Instructions
Combine milk, cream, and salt in a large pot. Heat over medium-high, monitoring temperature.
Heat until 75°C, then add vinegar and stir briefly.
Let sit for 5 minutes, then drain curds in a fine cloth for at least 1 hour.
Store in a container, add more salt if needed, and refrigerate up to 5 days.
