Ingredients

  • 2 L milk, whole
  • 200 g fresh/pasteurized heavy cream (49% fat)
  • 80 mL white wine vinegar (4% acidity)
  • 6 g granulated salt (refined, common)

Instructions 

  • Combine milk, cream, and salt in a large pot. Heat over medium-high, monitoring temperature.
  • Heat until 75°C, then add vinegar and stir briefly.
  • Let sit for 5 minutes, then drain curds in a fine cloth for at least 1 hour.
  • Store in a container, add more salt if needed, and refrigerate up to 5 days.

Ensure proper drainage for a creamier texture.
