Enjoy a delicious homemade pineapple ice cream without an ice cream maker, perfect for hot days and easy to prepare.

Ingredients

Liquid Ingredients

  • 0.94 cup pineapple juice concentrate (from bottle)
  • 0.88 cup chopped pineapple (about ½ pineapple)
  • 1.5 tablespoons sugar (crystal sugar)

Dairy & Condiments

  • 1.75 cups sweetened condensed milk (1 can or small box)
  • 0.6 cup unsweetened yogurt
  • 0.66 cup fresh or pasteurized cream (chilled, with +35% fat)

Instructions 

  • Reduce pineapple juice in a pan over low heat for 10 minutes until it reaches 100mL. Cool and refrigerate.
  • Sauté chopped pineapple with sugar over low heat for 5-6 minutes until soft. Cool completely.
  • Whip the chilled cream to stiff peaks and refrigerate.
  • Mix condensed milk, yogurt, and cooled pineapple juice until smooth.
  • Fold in whipped cream until well combined.
  • Transfer to a container, fold in cooked pineapple, and freeze for at least 8 hours, stirring after 3-4 hours.
  • Serve immediately after freezing.

Notes

For best texture, stir the mixture during freezing.
