Enjoy a creamy, homemade doce de leite ice cream without an ice cream maker, perfect for a sweet treat.

Ingredients

Liquid Glucose

  • 50 g glicose lĂ­quida (transparente)

Milk

  • 100 mL leite integral (levemente aquecido)

Vanilla Extract

  • 5 mL extrato de baunilha (ou 1-2 mL essĂȘncia)

Cremoso/Pastoso Dulce de Leite

  • 350 g doce de leite cremoso/pastoso

Cream

  • 250 g creme de leite fresco/pasteurizado (gelado; tenha mais que 35% gordura | usado: 49% gordura)

Instructions 

  • Misture glucose, vanilla, and warm milk until dissolved.
  • Add the milk mixture to the dulce de leche and mix well.
  • Whip the cream to stiff peaks.
  • Fold about 1/3 of the whipped cream into the dulce de leche mixture.
  • Mix in the remaining whipped cream thoroughly.
  • Transfer to a container, freeze for 6-7 hours.

Notes

For best results, use high-fat cream and ensure thorough mixing.
