Enjoy a refreshing and easy homemade lemon ice cream without the need for a ice cream maker. Perfect for a quick treat on a hot day.

Ingredients

Fruits and Zest

  • 130 mL lemon juice (Taiti) (about 5 lemons, 300g total)
  • 150 g fresh/pasteurized heavy cream (above 35% fat, used 45%)
  • 170 g plain yogurt
  • 395 g sweetened condensed milk (1 can or box)
  • 50 mL vanilla cachaça (optional) (for caipirinha flavor)

Instructions 

  • Extract zest from 3 lemons before juicing. Squeeze all lemons to get 130mL juice. Reserve zest and juice.
  • Whip the heavy cream to stiff peaks and refrigerate.
  • Mix condensed milk and yogurt until smooth.
  • Add cachaça and lemon juice, mix well. The mixture will thicken.
  • Fold in whipped cream and lemon zest. Transfer to a container and freeze for at least 4 hours.
  • Serve a few minutes after removing from freezer for best texture.

Notes

For a creamier texture, let the sorbet sit at room temperature for a few minutes before scooping.
