A refreshing watermelon and basil sorbet perfect for hot days, combining sweet, herbal, and citrus flavors.

Ingredients

sugar syrup

  • 75 g açúcar cristal
  • 50 mL água

watermelon mixture

  • 1 kg melancia madura (em cubos sem semente gelada)

basil and alcohol mixture

  • 25 folhas de manjericão limpas
  • 50 mL vodka
  • 5 mL suco de limão siciliano

Instructions 

  • Prepare a sugar syrup by dissolving sugar in water over low heat. Set aside.
  • Blend watermelon until smooth. Mix in the cooled syrup. Set aside.
  • Process basil, vodka, and lemon juice until well combined. Add about 3.5 oz of watermelon juice to enhance volume.
  • Combine basil mixture with watermelon juice. Strain through a fine sieve.
  • Churn in an ice cream maker or freeze, breaking crystals every 2 hours for a smoother texture.

Notes

Adjust sugar and basil to taste. For a creamier texture, process multiple times during freezing.
