Instructions
Prepare a sugar syrup by dissolving sugar in water over low heat. Set aside.
Blend watermelon until smooth. Mix in the cooled syrup. Set aside.
Process basil, vodka, and lemon juice until well combined. Add about 3.5 oz of watermelon juice to enhance volume.
Combine basil mixture with watermelon juice. Strain through a fine sieve.
Churn in an ice cream maker or freeze, breaking crystals every 2 hours for a smoother texture.
Notes
Adjust sugar and basil to taste. For a creamier texture, process multiple times during freezing.
