Delight in this creamy Nutella ice cream with crunchy cookies, perfect for a sweet treat.

Instructions
Combine milk, cream, half the sugar, salt, and vanilla inside the scraped vanilla bean. Heat on low, whisking to dissolve sugar and homogenize.
Heat until warm, do not boil, about 5-8 minutes.
Mix remaining sugar with egg yolks and whisk until pale yellow and sugar dissolves.
Gradually add half of the hot milk mixture to yolks, then combine with remaining liquid, stirring constantly.
Return to pan and cook on low until thickened, about 4-5 minutes, until it coats the back of a spoon.
Strain to remove lumps, then cool in a water bath with ice until fully chilled, 2-3 hours.
Chop cookies into small pieces. If using Nutella, mix a small amount into the base for easier incorporation.
Churn the base in an ice cream maker according to manufacturer instructions.
When nearly finished, add cookie pieces and mix well. Transfer to a container, layer Nutella if desired, and freeze until firm.
Notes
For best texture, fully chill the base before churning.
