A refreshing pear and white wine ice cream that combines natural sweetness with a hint of wine flavor, perfect for a sophisticated treat.

Ingredients

Fruits

  • 1200 g pera portuguesa (about 9 medium pears)
  • 125 mL vinho branco Riesling
  • 100 g açúcar cristal
  • 95 g glicose líquida
  • 65 mL água

Instructions 

  • Combine water, white wine, sugar, and glucose in a saucepan. Reserve.
  • Wash, peel, core, and cut pears into uniform pieces. Place peeled pears in water to prevent browning. Measure approximately 800g after preparation.
  • As you cut pears, add them to the liquid mixture.
  • Cook over medium heat until pears are soft, about 7-10 minutes.
  • Cool pears and syrup, then refrigerate overnight or use an ice bath for same-day use.
  • Blend cooled pears until smooth, then strain to obtain puree.
  • Churn the pear puree in an ice cream maker according to manufacturer instructions. Freeze in a container with a lid.
  • Stir occasionally during freezing to maintain a smooth texture.

Notes

Use ripe pears for best flavor and sweetness.
