A rich and airy chocolate soufflé that melts in your mouth, perfect for a special dessert.

Ingredients

Dairy and Sugar

  • 200 mL leite integral
  • 75 g açúcar cristal (I)
  • 35 g manteiga sem sal
  • 70 g gema (cerca 04 unidades com ~17g/cada)
  • 35 g farinha de trigo
  • 1.5 g sal refinado (cerca 1/4 c.chá)
  • 135 g chocolate meio amargo (picado ou gotas)
  • 175 g clara (cerca 05 unidades com ~35g/cada)
  • 25 g açúcar cristal (II)
  • 34 g gema (cerca 02 unidades com ~17g/cada)
  • 30 g açúcar cristal (I)
  • 3 g amido de milho (cerca 1 c.chá)
  • 20 g açúcar cristal (II)
  • 0.5 fava fava de baunilha (raspadas; ou 10mL extrato de baunilha ou 5mL essência)

Instructions 

  • Preheat oven to 180°C (350°F). Melt chocolate and butter together.
  • Whisk egg yolks with sugar and vanilla, then combine with melted chocolate mixture.
  • In a separate bowl, beat egg whites until stiff peaks form, then gently fold into chocolate mixture.
  • Pour batter into ramekins and bake for 15 minutes. Serve immediately.

Notes

Use high-quality chocolate for best flavor.
