Prepare the crust by mixing granola with melted butter and honey, then press into a pan and chill.
Mix yogurt, coalhada, melted white chocolate, honey, and vanilla, then pour over the crust.
Chop and arrange the fruits on top of the yogurt layer.
Prepare the passion fruit syrup by dissolving gelatin in hot water, then adding passion fruit pulp, sugar, and remaining water. Chill and pour over the assembled dessert before serving.
